Famous Pork Chops

Famous-Pork-ChopsThis is an easy and delicious part of a mid-week meal.

Ingredients:

* 1 cup crushed butter crackers
* 1/4 teaspoon garlic salt
* 1/4 teaspoon ground black pepper
* 2 eggs, beaten
* 4 pork chops
* 1/4 cup butter

Directions
:

1. Preheat oven to 375 degrees F.
 2. In a shallow bowl combine crushed crackers, garlic salt and pepper; mix well. In a separate bowl beat eggs.
3. Dip your pork chops in the egg batter and then in the cracker mixture. Place the pork chops in a casserole dish. Place chunks of the butter around the pork chops.
4.Cover and bake for 45 minutes. Turn over after 20 minutes, and uncover for the last 10 min.

: 15 Min    Cook Time:45 Min    Yields: 4 servings

 

Fresh Blueberry Spread

Blueberry-SpreadIngredients:

* About 1/2 cup fresh blueberries (more or less is fine)
* 1/2 cup (1 stick) butter, at room temperature
* 8 ounces cream cheese
* 1/4 cup honey

Directions
:

Combine all ingredients in a food processor. Buzz until smooth, and transfer to a sealable container. Pop in the freezer for a few minutes if using  immediately for the butter to firm up or store in the refrigerator until ready to serve. Serve with warm muffins or toast.

 Yield: About 1½ cups

Variation
: Use 1 cup frozen blueberries thawed in place of the fresh. Serve on pancakes, waffles, or in crepes.

 

Vegetable Nachos

Vegetable Nachos Ingredients 2 cups     low-fat refried beans 1 cup       broccoli, chopped small 1 cup       radishes, chopped small 1 cup       squash, chopped small 2 cups     shredded pepper jack cheese 1/4 cup     fresh scallions, chopped small 1/4 cup     fresh cilantro, finely chopped tortilla chips Preparation Spread refried beans at the bottom of a baking dish and sprinkle chopped broccoli, radishes and squash on the oven at 300 degrees F for 7 minutes. Remove baking dish from the oven and add cheese and tortilla chips on top and bake in the oven for 3 minutes more. After removing the baking dish from the oven, sprinkle nachos with scallions and cilantro. Add low-fat sour cream, fresh salsa and guacamole on the side. Serve immediately. Chocolate Carmel Pecan Tart

Pecan-Tart3/4 cup      brown sugar
1/2 cup     butter
1/2 cup     honey
2 tablespoons     sugar
1/2 cup     heavy cream
2 cups     pecans, toasted and chopped
1 cup     dark chocolate chips
1     pie crust, pre-baked in a pie pan or short tart pan
 
Preparation:
Combine the first 4 ingredients in a heavy-bottom sauce pot and heat mixture until it reaches 240 degrees F on a candy thermometer. Remove from heat and stir in heavy cream, toasted pecans, and chocolate chips. Fill baked pie shell and bake for 25-30 minutes in a 350-degree F oven. Let cool completely before slicing.

 

Simply Delicious Strawberry Cake

    * 1 (18.25-ounce) box white cake mix
    * 1 (3-ounce) box strawberry-flavored instant gelatin
    * 1 (15-ounce) package frozen strawberries in syrup, thawed and pureed
    * 4 large eggs
    * 1/2 cup vegetable oil
    * 1/4 cup water
    * Strawberry cream cheese frosting, recipe follows
    * Strawberry Cream Cheese Frosting
    * 1/4 cup butter, softened
    * 1 (8-ounce) package cream cheese, softened
    * 1 (10-ounce) package frozen strawberries in syrup, thawed and pureed
    * 1/2 teaspoon strawberry extract
    * 7 cups confectioners' sugar
    * Freshly sliced strawberries, for garnish, optional

Directions:

Preheat oven to 350 degrees F. Lightly grease 2 (9-inch) round cake pans.

In a large bowl, combine cake mix and gelatin. Add pureed strawberries, eggs, oil, and water; beat at medium speed with an electric mixer until smooth. Pour into prepared pans, and bake for 20 minutes, or until a wooden pick inserted in the center comes out clean.

Let cool in pans for 10 minutes. Remove from pans, and cool completely on wire racks.
For the frosting:

In a large bowl, beat butter and cream cheese at medium speed with an electric mixer until creamy. Beat in 1/4 cup of the strawberry puree and the vanilla extract. (The rest of the puree is leftover but can be used in smoothies or on ice cream for a delicious treat.) Gradually add confectioners' sugar, beating until smooth.

Spread frosting in between layers and on top and sides of cake. Garnish with sliced fresh strawberries, if desired.
